Meal Prep

Anyone else do this? I am always told by so many they just can't but I truly believe it is because so many have seen and heard of meal prepping as something you do all at once for an entire week of meals and that is just not true. I feel that meal prepping comes in so many different forms. Last weeked I made 2 loaves of bread, blueberry muffins, peanut butter protein balls, baked apples, and chocolate chips cookies. Was that everything we ate? No, of course not but it was enough to fix the sweet tooths and to avoid super unhealthy options at the grocery store, it helped prepare quick breakfast and snacks for on the go and so much more.
Fast forward to this weekend and I am already making 2 loaves of bread, cucumber chips to snack on and applesauce muffins are on my list as well. These aren't no where near everything but again it is something I can make to make my life easier this coming week.
Also with the garden coming in this means I will need to use my time wisely and that means easier meals that can go further or just be thrown all together quickly. Tonight I am making a beef stew mix with fresh tomatoes, leftover corn, celery, dehydrated okra, potatoes and carrots. This will do for 2 meals as I made so much and we will have fresh bread to go with it.
As things come in daily I make list of what I want to do and make things go further. We aren't getting many okra each day so I am dehydrating them or freezing them after slicing them up. Tomatoes are great for sandwhiches and of course for part of meals.
It is simple to get a prep station together as you will save money in the long term set up.
For me these few tools are my favorite for this time. I use bread pans,
I always need 2 as the bread I make is enough for 2 loaves at a time. I also need containers to seal everything in that will last for a week or so as things are ate. These are my favorite ones to use. They are glass and easy to use.
Just these few items and I can make plenty of things and they will last throughout our week.
I hope that the next time you want to meal prep you go ahead and do that even if it is 2 loaves of bread and some muffins.
